Barbecue drinks

At a barbecue, you spend a long time outdoors, and that is the whole story: you pour more often and in smaller amounts than indoors, and everything has to stay cold as the sun moves across the sky. A beer or radler between servings of meat, a refreshing white wine or rosé with the salads, a long drink you make in a large pitcher, and something smoky or spicy made with whisky or spiced rum that can stand up to grilled meat. Below are nine drinks, the glasses that can stay outside, and how to make ice that does not disappear in ten minutes.

Nine drinks for the barbecue

All nine below can stand up to smoke and charred edges, and none requires more than two actions while the meat is on the grill. Three are made in a pitcher, three are served short and cold, and three are alcohol-free.

Serving at the grill

Pour smaller servings, more often

A full glass left in the sun for half an hour will be lukewarm before you finish it, and lukewarm is the end of the flavor in almost anything you serve outdoors. So it is better to pour half a glass more often from the pitcher than to fill it to the brim once: what is in the glass stays cold, and by the end of the evening there will be fewer half-finished drinks on the table. It also suits the way you eat, because you take small sips between bites of meat rather than emptying a whole glass at once. In the meantime, keep the pitcher in the shade instead of on the table in full sun, so the second pour is just as cold as the first.

A long drink from a large pitcher

Once the meat is on the grill, you do not want to be mixing drinks by the glass. So make the long drink in a pitcher: allow for eight 12.5 cl glasses per liter, and use one part spirits to just over three parts juice or soft drink. Stir the base together without ice or fizz, chill the pitcher, and top it up only when serving. For more than eight people, a dispenser with a tap is more practical, as everyone can serve themselves and no one has to carry it. Put a second pitcher without alcohol beside it, using the same base.

Drinks with meat, fish, and vegetables

Grilled meat has smoke and charred edges, so it calls for something that can stand up to them: a spicy or smoky drink, or something with ginger to counter the fat. With fish and shrimp, it works the other way around: the lighter and fresher, the better, so choose a dry white wine or something with citrus. Grilled vegetables fall somewhere in between and are often sweeter than you expect because of caramelization, so rosé or a lightly bitter long drink is a good match. With a sweet marinade, you should always choose something bitter rather than something sweet.

Ice that lasts more than ten minutes

The smaller the ice, the more surface area comes into contact with the drink, and the faster it melts. One 4 cm cube will therefore last much longer in the sun than a handful of cubes from a standard tray, and will dilute your drink less along the way. Freeze the cubes the day before and store them in a sealed bag, otherwise they will absorb the smell of the freezer. For chilling bottles, use regular ice, but add it to a bucket with water: water conducts heat better than ice alone, so a bottle will be cold within fifteen minutes.

Glasses that can stay outside

Tempered glass is more resistant to impact and temperature changes than ordinary glass and can therefore handle a long evening outdoors. If there is a stone floor, a swimming pool or children walking barefoot, plastic is the wiser choice: it can fall over without consequences and you can stack it. View the shatterproof glasses and the plastic cocktail glasses. A glass crate is handy for carrying everything outside and back inside in one go.

A supply of alcohol-free drinks for anyone who still has to drive

There is always someone who still has to drive, and they spend the whole evening eating outside with everyone else. So put out enough alcohol-free options, not just one bottle at the end: the same drink without spirits, as well as the alcohol-free gin and tonic, the alcohol-free Spritz or something from the mocktails. Crodino is a bitter non-alcoholic aperitif that serves the same purpose as a spritz. Serve it in the same glass as the rest. NIX18: under 18, no alcohol.

The right glass

Outdoors, you want glassware that can take a knock and stays put when the table wobbles. The 40 cl Willi Becher beer glass is a café classic: its tapered profile keeps the foamy head compact, and Arcoroc tempers the glass, making it, according to the product description, more resistant to impact and temperature changes. Alongside it is a 42.5 cl shatterproof water glass, intended for places where real glass is too risky, such as a patio with a stone floor or a garden where children walk barefoot. More beer glasses can be found among the beer glasses, the pilsner glasses and the specialty beer glasses; find wine glasses among the white wine glasses and the rosé wine glasses.

Handy next to the grill

Next to the grill, you want to keep your hands free and be able to pour quickly, so lay these four out on the garden table beforehand. Fill an ice cube mold the day before with cubes that stay solid longer outdoors; a bar spoon stirs a full pitcher in one go while the meat is cooking; a jigger gets the proportions right in one go before you multiply them by eight; and a zester creates the citrus twist that pairs well with grilled meat. These are the bar tools we use ourselves; you can find everything in our bar tools & cocktail sets.

What do you use to make these Barbecue drinks?

With salads and fish, serve white wine or rosé; with meat, something spicy or smoky works better: whisky, bourbon or Captain Morgan. For a pitcher-made long drink, choose tequila or gin. Beer is naturally part of it too; the glasses for that are in the beer glasses collection. On each drinks page, you can read the alcohol percentage, what it tastes like, which cocktails it works in and which glass you need.

Frequently asked questions

What do you drink at a barbecue?

Something cold, preferably bitter or refreshing rather than sweet, because sweet marinades would otherwise pile up on one another. A Paloma or a Moscow Mule from a large pitcher works well for a group, and something spicy or smoky pairs well with the meat. Also put out a pitcher without alcohol.

Which wine goes with grilled meat, fish and vegetables?

With fish and prawns, a dry white wine; with grilled vegetables that become sweeter through caramelization, a rosé; and with robust grilled meat, something with more body or a spicy long drink alongside it. It is about taste, not rules: pour whatever you feel like.

Which glass do you use outdoors at a barbecue?

Tempered glass can easily handle an evening outdoors, such as the 40 cl Willi Becher beer glass. If there is a stone floor or children are running around barefoot, choose plastic from the unbreakable glasses. All beer models are listed under beer glasses.

How do you keep ice intact longer at a barbecue?

Use large cubes of about 4 cm instead of small cubes: less surface area means slower melting. Freeze them a day in advance and store them in a sealed bag. Chill bottles in a bucket with ice and water instead, because water conducts heat better than ice alone.
