A Golden Cadillac is a cream cocktail made with equal parts: 3 cl Galliano, 3 cl white crème de cacao, and 3 cl cream, shaken hard with ice and strained into an ice-cold cocktail glass. Making a Golden Cadillac: step by step

Put the cocktail glass in the freezer, or fill it with ice and a little water while you prepare the rest. The glass must be really cold before you pour.

Measure the Galliano, white crème de cacao, and cream into the shaker: three equal measures, 3 cl of each ingredient.

Fill the shaker with ice and shake hard for fifteen seconds. Here, you're not just shaking to chill it but also to whip the cream, so shake hard and long enough.

Pour the ice out of the glass, strain the cocktail into it, and grate fresh nutmeg or a little dark chocolate over it.

The story

Cream cocktails resemble one another: they contain cream, something sweet, and they come to the table after dinner. What sets the Golden Cadillac apart is the Galliano. While a Grasshopper leans on mint and a Brandy Alexander on cognac and cacao, Galliano brings vanilla with a spicy, almost anise-like edge. That edge is exactly what the cream needs, because without something to balance it, sweet and creamy quickly becomes flat. The structure helps too: equal parts of three ingredients, so you don't have to look up a ratio. That makes this one of the few classics you can build from memory.

The right glass

This is a small cocktail. Three times 3 cl plus the water from the ice comes to around eleven centilitres, and in a spacious V-shaped glass, it sits like a puddle on the bottom that becomes lukewarm within a few minutes. A Nick and Nora of around fifteen centilitres keeps that same serving higher in the glass and therefore cold for longer, and the description of this model calculates that capacity in exactly the same way. What do you use to make a golden cadillac?

A golden cadillac requires two liqueurs: Galliano and white crème de cacao. Variations & twists

Replace the white crème de cacao with a green mint liqueur and you have a Grasshopper; swap the Galliano for cognac and it becomes a Brandy Alexander. A splash of amaretto in place of some of the crème de cacao makes the whole thing nuttier. If you want it less rich, use half cream and half whole milk, although that also produces less foam. Serving tip

Serve it after dinner, not before: cream and cocoa are filling, and before a meal that shuts down your palate. Grate the nutmeg over the glass just before serving, because grated nutmeg loses its aroma within a minute. Place the glass on a chilled coaster or small plate if serving it outdoors.

What Galliano does that other liqueurs don't

Put a Golden Cadillac next to a Brandy Alexander or a Grasshopper, and the difference comes down to one bottle. Galliano brings vanilla, but it also has a spicy, anise-like side that you don't find in either of the other cream cocktails. That spiciness is exactly what cream needs: fat and sugar make a drink smooth but also dull, while Galliano's aromatic edge keeps it lively. Remove it and replace it with something purely sweet, and you're left with sweet cream without direction. The percentage is listed on the label and varies by version; expect around twenty-five percent.

Why you shake hard

With most cocktails, you shake to chill and dilute. Here, you add another step: you whip the cream. Unwhipped cream is thin and sinks to the bottom; only after fifteen seconds of vigorous shaking with ice has the cream absorbed enough air to thicken the drink and form a light collar on top. You can hear it: the sloshing becomes duller as the mixture comes together. Shake for too short a time, and you'll pour three layers instead of a cocktail.

Why the glass needs to be cold

Room at room temperature leaves a greasy film on your tongue; when served cold, you don't notice it. A Golden Cadillac gets no ice in the glass, so the only cooling it receives comes from the shaker and the glass itself. A room-temperature coupe undoes half your work in a few seconds. So put the glass in the freezer beforehand or fill it with ice and water while you shake, then discard that just before pouring.

The difference from the Golden Dream

Both drinks revolve around Galliano, but a Golden Dream also gets orange juice. The juice makes the whole thing fresher and more tart, whereas the Golden Cadillac relies entirely on cream and cocoa. In practice, you are choosing between a dessert drink and a fruity serve with the same base. Names in this area of the menu overlap, so it is wise to say what should be in it when ordering instead of just giving the name.

White or brown crème de cacao

There are two types of crème de cacao, white and dark brown, and they taste roughly the same. The difference is in the color. With the white version, the cocktail stays light golden yellow, exactly the color the name refers to. With the brown version, you get a milk-chocolate-brown drink that tastes perfectly good but no longer resembles a Golden Cadillac. If you only have the brown version at home, go ahead and make it, but do not call it a Golden Cadillac.
